Transglutaminase Enzyme

TGPro™ Transglutaminase is a widely used natural enzyme produced by the fermentation of Streptoverticillium Mobaraense that binds the natural protein sources of food, improving the texture, avoiding syneresis, and reducing costs without additional additives or extra powder proteins. Transglutaminase (TG) is a unique enzyme capable of catalyzing cross-links between the amino acid residues Lysine and Glutamine in proteins. Transglutaminase reaction is influenced by the time and temperature. Higher temperatures require less reaction time. Transglutaminase is active in a wide range of both temperature and pH ranges.
